Here's my first recipe for our new BBQ Marinade section.  We start out with a soy based bbq chicken marinade.  I first experienced soy sauce as a marinade ingredient in a similiar recipe for steaks many years ago which I'll also post here in this section.  It was amazing so here's a great version of it for chicken. 

 

 

 

BBQ Chicken Marinade

Ingredients:

  • 1 cup soy sauce
  • 1/2 cup cider vinegar
  • 2 cloves minced garlic
  • 1 tsp oregano
  • 1 tsp tarragon

Directions:

  1. Blend all ingredients in a bowl.
  2. Add chicken.  The best way to marinade is to put the chicken along with the marinade into a ziplock bag and get all the air out you can.
  3. Turn the bag every 5 minutes for at least 30 minutes if you are in a hurry to marinade.
  4. For the best bbq chicken marinade results, marinade overnight in the refrigerator.
  5. Baste the chicken while grilling.
  6. Then brush the chicken with your favorite BBQ sauce for the last 10 minutes of grilling.  (if you like the marinade flavor by itself, you can skip the bbq sauce.)

 

Since I know not all of you are soy sauce lovers, I wanted to also provide another quick and easy BBQ Chicken Marinade for you all to try.  This one features using Italian dressing which most people have in their frig somewhere.  This happens to be a really sweet version of the recipe as it has both honey and maple syrup.  There is just a tad bit of soy sauce in this recipe but you can leave it out if you don't like soy sauce.

 

Ingredients:

  • 1 cup Italian dressing
  • 1/4 cup honey
  • 3 cloves minced garlic
  • 1/4 cup maple syrup
  • 3 tbsp. lemon juice
  • 2 tbsp. soy sauce
  • 1 tbsp. Dijon mustard
  • 1 tsp. curry powder
  • 1/4 tsp. ground ginger

 

Directions:

  1. Mix all of the ingredients together.
  2. Divide marinade mixture in half and pour half of the marinade into a jar and refrigerate.
  3. Put the remaining half of the marinade in a plastic bag with the boneless chicken breast.
  4. Marinate for several hours or overnight in the refrigerator.
  5. Remove the chicken from the plastic bag and discard the marinade that was used for the chicken (or it may be used for basting the chicken only during the first 5 minutes of cooking)
  6. Grill chicken over hot coals until tender.
  7. Bring to a boil the marinade which was stored in the jar.
  8. Serve the chicken on a bed of rice and pour the fresh (from the jar) marinade over the top and serve.
