Huckleberry BBQ Sauce & Huckleberry Sauce Recipes
Huckleberries! Ah, my favorite of all fruits. Like many people, I'd never heard of them until I was on vacation a few years ago up in Northern Idaho. Now that I live in Montana, I have great access to all sorts of Huckleberries and Huckleberry products. Since many people may not have good access to Huckleberry products, I've listed a number of Huckleberry BBQ Sauce Recipes so you can make it a number of ways using different huckleberry ingredients. Needless to say, making the barbecue sauce from fresh huckleberries is the best.
Huckleberry BBQ Sauce Recipe (using fresh Huckleberries):
Ingredients:
- 1/2 cup ketchup
- 1 cup rice vinegar
- 2 cups huckleberries
- 1 small onion, diced
- 2 tsp. garlic powder
- 2 T brown sugar
- 1 T molasses
- 2 tsp. dry mustard
- 1 tsp. chili powder
Directions:
Combine all ingredients in a saucepan and reduce for 20 minutes.

If you don't have fresh Huckleberries, then you can try this Barbecue sauce recipe using a Huckleberry Vinegar.
Huckleberry BBQ Sauce Recipe (using Huckleberry Vinegar):
Ingredients:- 1/2 C ketchup
- 1 C Wildbeary Huckleberry Vinegar (link to website where you can purchase)
- 1 small onion, diced
- 2 tsp. garlic powder
- 2 T brown sugar
- 1 T molasses
- 2 tsp. dry mustard
- 1 tsp chili powder
Combine all ingredients in a saucepan. Bring to a boil. Reduce heat and simmer for 20 minutes.
This recipe will be much easier to make as Huckleberry jam or preserves will be easier to find for most people. However, you can always order it online if you don't have a grocery or specialty store in your area that carries any huckleberry products.
Huckleberry BBQ Sauce Recipe (Using Huckleberry Jam):
Ingredients:
- 1 can diced tomatoes with juice
- 1/2 ounce tomato paste
- 1 tablespoon apple cider vinegar
- 1 teaspoon balsamic vinegar
- 2 teaspoons Worcestershire sauce
- 1/2 cup brown sugar
- 1 teaspoon molasses
- 1 tablespoon huckleberry jam (personally I like more!)
- 1 teaspoon liquid smoke
- 1 teaspoon onion powder
- 1 teaspoon yellow mustard
- 1 teaspoon fresh garlic, minced
- 1 teaspoon freshly ground black pepper
- 1 tablespoon kosher salt
Directions:
In a medium sauce pan bring the tomatoes, tomato paste, cider vinegar, balsamic vinegar, and Worcestershire sauce to a boil. Reduce heat and simmer for 10 minutes. Add the rest of the ingredients and bring back to a boil. Reduce the heat and simmer for another 10 minutes. Allow the to cool. Puree the sauce in a blender until smooth. Serve warm.
Now for a simple Huckleberry Sauce to serve with pork or chicken or any dish you like if you aren't looking for a full blown Huckleberry BBQ sauce.
Huckleberry Sauce Recipe: 
Ingredients: - 4 cups of huckleberries
1 cup chicken stock
1 cup sugar
3 tablespoons of cider vinegar (or respeberry or even better huckleberry vinegar)
splash of tawny port - 1/2 tablespoon butter
Directions:
Simmer the huckleberries in the chicken stock with the sugar and cider and a few splashes of the port. Mash half of the berries but leave some whole (like good cranberry sauce). Add a dab of butter to finish it giving the sauce a smooth quality.

Pork Loin Recipe:
Ingredients:
- 1 lb pork loin
- 3 tbsp olive oil
- 1 tbsp fresh basil, chopped
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh sage, chopped
- 1 tsp fresh parsley, chopped
- 1 tsp fresh oregano, chopped
- 1 tsp ground pepper
- 2 tsp salt
- red wine
- orange for zest and garnish
- huckleberry sauce
Directions:
- Combine fresh chopped herbs with salt and pepper.
- Brush the pork loin with 1 tbsp oil and roll in herb mixture until fully coated. Refrigerate for 20 minutes.
- Pre-heat oven to 400 degree. Heat remaining oil in skillet and brown pork loin. Turn meat carefully. Move pork loin to roasting pan and de-glaze skillet with a splash of red wine; pour over meat. Put in oven for 15 to 20 minutes, depending on taste.
- Remove from oven and allow to rest 10 minutes. Slice and arrange over bed of grain (rice pilaf in this case). Drizzle generously with huckleberry sauce and garnish with sliced oranges.
