White BBQ Sauce

White barbecue sauce is a mayonnaise-based sauce instead of the traditional tomato or mustard based saucues.  Also known as Alabama barbecue sauce because of its origin in Alabama.  These sauces are delicious on grilled meats or used as a dipping sauce.  However, be careful to add this type of barbecue sauce to the meat only near the end of cooking.  Since Mayonnaise breaks down very quickly with heat, it’s almost more of a dipping sauce than any type of basting barbecue sauce.

If you like Hot Chilies then you’ll love this Hot Chile pepper barbecue sauce recipe.  There’s plenty of ways to make any sauce hot, including BBQ sauce.  This recipe uses red chilies to crank up the heat.

 

Hot Chile Pepper BBQ Sauce

Ingredients
  • 1 cup hot water
  • 6 dried red chili peppers
  • 4 dried pequin chili peppers
  • 1 large onion, chopped
  • 1 cup ketchup
  • ½ cup tomato sauce
  • ⅓ cup vinegar
  • ¼ cup brown sugar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 teaspoons dry mustard
  • 2 teaspoons Worcestershire sauce

Instructions
  1. Place dried chilies in hot water for 15 minutes to soften.
  2. Pour water and chilies into a blender and blend until smooth.
  3. Sauté onion and garlic in oil.
  4. Pour in blended chilies and add remaining ingredients.
  5. Bring to a boil then remove from heat and allow to cool.
  6. For a smoother sauce, return cooled sauce to blender and blend until smooth.

Hot barbecue sauces are great if you enjoy “kickin it up a notch” as Emeril Lagasse would say.   Now Jalapeno is by far NOT the hottest pepper out there.  In fact, it’s one of the milder hot peppers available.  So if you are ready for really hot barbecue sauce you might want to try some of the Habanero barbecue sauce recipes.  If not, and you are just venturing into the land of HOT, then this is a great place to start.

 

If you haven’t made hot sauces before and you don’t know how much heat you can take, you might want to try one of the recipes with the least amount of peppers or just cut down the amount of hot peppers in any of the recipes and ease into it!  Hot dishes are definitely an acquired taste.  Not many people come out of the womb ready to eat the hottest food around!  So, be careful, be adventurous and definitely give some of these hot and spicy barbecue sauces a try and see how you like them!

Ingredients
  • 2 Chipotle chilies
  • 2 bacon slices, finely cut up
  • ¼ cup onion, finely chopped (1 small)
  • 3 cup tomatoes, finely chopped
  • 1 cup beef broth
  • ¼ cup carrot, finely chopped
  • ¼ cup celery, finely chopped
  • ¼ cup fresh cilantro, snipped
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
  1. Cover chilies with warm water.
  2. Let stand until softened, about 1 hour.
  3. Drain and finely chop.
  4. Cook and stir bacon and onion in a 2-quart saucepan until bacon is crisp.
  5. Stir in chilies and remaining ingredients.

Chipotle Barbecue Sauce (Sweet version)

Ingredients
  • ¼ cup Chipotle puree (below)
  • (Puree made using 1 (7-ounce) can chipotle chiles in adobo sauce)
  • ½ cup cider vinegar
  • 1 quart ketchup
  • ¼ cup soy sauce
  • ¼ cup molasses
  • ¼ cup lightly packed light brown sugar
  • 2 teaspoons granulated garlic
  • 2 teaspoons granulated onion
  • 2 teaspoons black pepper
  • 1 teaspoon white pepper
  • ½ cup orange juice

Instructions
  1. This is a simple way to make the Chipotle Puree without using the normal dried ones. Place contents of the can of Chipotle in a blender. Add water to the can until it is about ⅔ full. Swirl water around can to rinse well, then pour water into blender. Blend on high speed for about 10 seconds, or until completely smooth.
  2. Take ¼ cup of the Puree (or more if you like a stronger Chipotle flavor and you like it hotter) and add all the other ingredients together. Heat the whole concoction up and then use it!

Easy Jalapeno BBQ Sauce Recipe

Ingredients
  • 2 to 4 large, fresh jalapeño peppers
  • 1 tablespoon olive oil
  • One bottle of your favorite BBQ Sauce
  • Two shots of Johnny Walker Gold or other premium whiskey. (One shot of whiskey is for the sauce; the other is for the chef.)
  • Touch of molasses
  • Bottle cap of liquid smoke
  • Bottle cap Worcestershire sauce
  • Pinch of cane sugar

Instructions
  1. Cut the jalapeños into thin slices and brown them in a skillet with the olive oil.
  2. Mix all the ingredients together in a blender and chill in the refrigerator until you’re ready to serve.

This Sesame-Lime Marinade Recipe is a great tangy sauce and is delicious with chicken or beef kabobs. It keeps the meat moist and flavors the vegetables. This recipe is a marinade vs. a typical BBQ sauce so I labeled it as a marinade.

Ingredients
  • 1 tablespoon finely shredded lime peel
  • ⅓ cup lime juice
  • 3 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • ¼ teaspoon salt
  • 2 tablespoons honey
  • 1 teaspoon sesame seeds

Instructions
  1. Combine lime peel, juice, oils and salt. Pour over chicken or beef and marinate for 1 to 4 hours.
  2. Prepare meat for grill, reserving marinade. Combine ¼ cup marinade, honey and sesame seeds. Baste meat while cooking and again before serving.

This particular version of the recipe didn’t include grilling the chicken but I bet its just as good if not better on the grill!

 

Lime BBQ Sauce Recipe (with chicken)

Ingredients
  • 1 ts Butter
  • ¼ cup Carrots – shredded
  • 1 cup Celery – ¼ inch dice
  • 1 Med onion, ¼” dice
  • 1 Med red bell pepper ¼” dic
  • 1 Clove garlic, finely minced
  • 3 tbs Soy sauce
  • 1 cup Chicken stock
  • 2 tbs White vinegar
  • 1 cup Catsup
  • 1 tbs Dijon mustard
  • 3 tbs Brown sugar – packed
  • ½ ts Salt
  • ¼ cup Fresh lime juice
  • 3 Chicken breasts, halved & deboned

Instructions
  1. Sweat the carrots in butter 5 minutes; then add the celery, onion, red pepper and garlic;
  2. Meanwhile, in a medium saucepan, mix soy sauce, chicken stock and vinegar; whisk in catsup, Dijon mustard, brown sugar and salt; heat to simmer, dissolving sugar, and cook 10 minutes;
  3. Add vegetables and heat through remove from heat and stir in lime juice.
  4. Sear chicken on both sides and place in shallow pan; pour marinade over; let marinate for at least 30 minutes, turning occasionally and basting.
  5. Pour off marinade into saucepan; heat to boiling; grill chicken, basting until done; reduce sauce to half volume; serve over chicken.

If you love the flavor of Lime and Mint then this Lime-Mint BBQ Sauce Recipe will freshen up your next day of grilling!  If you are really big into the mint, here’s a great recipe for a mint flavored margarita to go with this dish as a drink.  It’s a great combination for a hot summer day while grilling on the deck.  The mint adds a nice freshness to the sauce as well as to margaritas.  This recipe is not as much of a traditional barbecue sauce as it is a grilling or marinade sauce but I couldn’t resist adding it as Limes are my favorite of the citrus fruits to use in cooking.

Ingredients
  • ¼ cup butter
  • ¼ cup minced green onions
  • 1 clove garlic, minced
  • ¼ cup minced celery
  • ¼ cup honey
  • 1 cup fresh lime juice
  • 1½ cup brewed mint tea
  • 1 tablespoon prepared brown mustard

Instructions
  1. In a heavy saucepan, melt the butter over medium heat. Add the onion and saute for a couple of minutes, until the onion is softened.
  2. Mix in the remaining ingredients, reduce the heat to low, and cook the mixture until it reduces by about half, approximately 40 minutes. Stir frequently.
  3. Serve the sauce warm or chilled. It keeps, refrigerated, for a couple of weeks.
